(Experiment 90) Apple pie oatmeal cookies

We went picking apples and while I will usually do my apple pie, I felt like doing oatmeal cookies. Can we combine both? Sure, can!

These cookies freeze really well, simply wait till they are cooled and wrap them in a plastic film then off to the freezer.

You need :

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups quick-cooking rolled oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cups cane or brown sugar
  • 1/4 cup oil
  • 1 teaspoon honey
  • 1/2tsp cinnamon
  • 1/4tsp nutmeg
  • 1 egg
  • 1 cup applesauce
  • 1 cup peeled apple cut into small pieces
  • (Optional) dry raisin


  1. Cream the butter in a stand mixer then add the sugar. Once combine, add the oil, egg, honey and apple sauce.
  2. In another bowl, combine the flour, oat, baking soda, cinnamon, nutmeg and salt. Slowly add them to the stand mixer, you can also do it fast but it will splash over your kitchen.  Finally, add the chopped apple.
  3. Preheat oven to 375F.
  4. On a baking sheet, lay parchment paper and put some of the oatmeal mix. I use a spoon and just wing it but you could use an ice cream scoop to make each portion the same. With this mix, I do 10 cookies spread over 2 baking sheets.
  5. Cook for ~18 minutes, if you use 2 baking trays at the same time using convection is recommended. You may need to add a few more minutes. Note that they keep cooking once they are out of the oven so don’t overcook.
